Floating Island

Ingredients:

For the cream

  • 1 liter of milk
  • 100 gr. Sugar
  • 10 gr. Cornflour
  • 4 egg yolks

For meringue

  • 4 egg whites
  • 100 gr. Sugar

For caramel

  • 100 gr. Sugar
  • 100 cl. Water

Elaboration:

For the cream
Bring milk to boil, mix in a bowl with half the sugar and cornstarch in another bowl the egg yolks with remaining sugar.
When the milk starts to boil, add cornstarch mixture and place it over low heat and stir about 10 minutes, then add the yolks and continue stirring for about two minutes. Remove from heat and cool.

For meringue
Beat the egg whites with sugar until stiff and form four balls.

For mounting
In four bowls, pour the cream and cold, the cream and meringue ball, then make candy and when browned put on the meringue with the help of a spoon.
